Summer Spring Rolls Fiber Points 10+
Spring Roll Ingredients
Round rice paper sheets
100g Angel hair or Glass noodles
Veggies of your choice that you like raw, chopped into thin sticks I use:
Carrot finely
Bell Peppers (each colour is a fiber point)
Spring Onions
Cabbage
Chilli peppers
Button Mushrooms
Fresh Basil leaves
Fresh Mint Leaves
Fresh Coriander leaves
Satay Dipping Sauce
2 tbsp Peanut Butter (doesn’t matter if it’s smooth or crunchy)
1 tbsp Soy sauce
Juice of 1 Lime
1 tspn Ginger paste
1 tspn Garlic paste
Chilli flakes (optional)
Toasted coconut flakes (optional)
Cook the noodles as per instructions. Then rinse them in cold water to stop them from continuing to cook. Put them in a bowl. Finely chop all your veggies. Then put some boiled water on a large dinner plate to dip your rice paper for 5-10 secs. Only dip the rice paper when ready to roll your spring roll.
Dip a sheet, place it on another plate or a chopping board. In the middle of your paper, place a couple of basil leaves (or 1 large leaf), add a small amount of your noodles, and then add your veggies to make a bundle in the middle of the roll. Make your satay dip, add all the ingredients and mix to make a paste.
