Simple Stir Fry

Stir Fry – Fiber Points 9+

A selection of veg to chop and stir fry: peppers, celery, carrots, onion, broccoli, cabbage, mushrooms, beansprouts, green beans, mangetout, edamame, spring onions, chillies, bamboo shoots etc. Lots of supermarkets sell bags of prechopped veg for quickness.

1 clove garlic crushed

1 cm fresh ginger thinly sliced

1 chilli finely chopped (or chilli flakes)

4-5 tbsp soy sauce 

1 tbsp coconut or olive oil

1 cup cooked basmati rice or rice noodles

1 handful of mixed raw nuts (optional)

You can add cooked chicken, beef, prawns or tofu if you want to add more protein to the stirfry.

Heat oil in a wok or frying pan

Add ginger, garlic and chilli, soy sauce

Add veg and mix through for 2-3mins

Add rice or noodles and mix through. Garnish with nuts and any fresh herbs. A squeeze of lime juice can be a nice addition.

Serve & enjoy.

Nearly all the supermarkets have a stir fry deal where you get your bag of mixed veg, protein, sauce and noodles. These are a great option to save time.
