Kiln Roasted Salmon

Over the last couple of years I have been learning about understanding my DNA evolutionary history – yes I did the ancestry DNA test before I knew they were selling your data on! So why not make good use of the information myself…

100% Celtic, 51% Scottish, 49% Irish! I was a bit disappointed that there wasn’t something more exciting in there…

When I started researching what we Celts used to eat, fish was a big part of the diet as was eating from the land.
Getting diagnosed with Crohn’s in 2017 and this year, Endometriosis I am really connecting to my ancestral ways.

I have shared quite a few fish recipes, but this one is by far the easiest…

Kiln Roasted Salmon Salad Fibre Points 12+

1 fillet of Kiln Roasted Salmon (or hot smoked salmon) from Aldi or Lidl (most supermarkets sell this, but Aldi and Lidl are in some cases significantly cheaper than other supermarkets – and it’s the same brand!)

1 apple, pear or peach (depending on the season)

Mixed leaf salad

1 tbsp each seeds (sunflower, pumpkin, linseed, sesame, hemp)

1 handful chopped walnuts (or any nuts you like)

Juice of ½ lime

Drizzle olive oil

Serve & enjoy

During the winter months I mix through stir fried rice to warm it up
