Quick & Easy Pasta Fiber Points 9+
70g pasta per person (wholewheat, lentil, spinach or buckwheat pasta will give you fiber points, regular pasta won’t)
Olive oil
Garlic
Herbs of your choice (the more variety the more points)
Pine nuts (or any nuts)
Hemp seeds (or any seeds)
Toasted Sesame seeds
Wild Garlic flowers (optional)
Chilli flakes or oil (optional)
Any other ingredients you might have lurking at the back of the cupboard – sun-dried tomatoes, jalapeno peppers, peppers in brine, olives etc
Boil the pasta as per the cooking instructions. Once the pasta is cooked, drain off most of the excess water (leave a couple of tablespoons of the water in the pan). Add the pasta back to your pan, add a tablespoon of olive oil (per person), crush in 1 clove of garlic (per person), and then sprinkle in the herbs you use. Return to the heat and mix through. Add your nuts and seeds and heat through for another couple of minutes.
Garnish with wild garlic flowers or fresh herbs (whatever you have) and drizzle your chilli oil or shake on some flakes if you want a bit of a kick to your dish.
