Chocolate & Banana Cake Fiber Points 4+
200g flour (white/plain flour no fiber points, whole wheat flour, rye, bran, seeded etc fiber points)
1 ½ tspn cinnamon powder
120ml olive oil
150ml liquid sweetener – I use honey or maple syrup
3 or 4 medium bananas (I use 4 if I have no eggs)
1 egg (or chia egg – mix 2 tbsp chia seeds with 6 tbsp water and leave to congeal)
1 tspn baking powder
2 tspn baking soda
2 tbsp cacao or cocoa powder
50g chopped walnuts (optional – you can use any nuts you like)
Put everything except the chopped nuts into a blender and blend. Preheat the oven to 160C.
I use a a medium rectangle cake tin… the bigger the tin, the thinner the cake… use what you prefer. Case it with grease proof paper.
Put the mix into the baking tin, scatter the nuts over the top if you are using them and bake for 30-40mins (depends how thick the cake is). Use a knife to pierce into the middle of the cake to check its cooked all the way through (the knife comes out wet it needs more time, comes out dry, it’s done).
