Malaysian Style Side Salad (Kerabu Salad)
1/2 large cucumber (approx 15cm)
100g pineapple (or any fruit, I have also used nectarine)
1 small red onion (approx 50g)
Handful of fresh mint leaves
Handful of peanuts chopped
Dressing
1 large red chilli finely chopped (remove the seeds if you don’t like too much heat)
1 lime (zested and juiced)
1 tsp fish sauce (or soy sauce)
1 tbsp light brown sugar
1/4 tsp tamarind paste
Instructions
Half the cucumber (longways) and scrape out the seeds (otherwise the salad will get soggy) and chop the cucumber into chunks. Chop up your fruit, finely slice the red onion and mix them together. In a separate bowl mix the dressing ingredients and add the finely chopped mint and peanuts then mix it all together.
