Mango & Peanut Slaw

This was a delicious side salad, the original recipe I saw in the free Tesco magazine, and went to Aldi to buy the +! I ate this with grilled chicken and sourdough bread.

Fiber Points 8+

2 firm mangoes (I bought a tub with chopped and peeled mango for ease – and it was on discount). 

1 large carrot julienned

50g spring onions finely chopped (I used shallots because I forgot to buy spring onions)

1/4 red cabbage shredded

1 red chilli finely chopped (remove the seeds if you don’t like too much spice – and don’t rub your eyes after, it stings!)

15g fresh coriander leaf

40g roast peanuts chopped

Dressing

1/2 lime juice (keep the other half to squeeze over before serving)

1 1/2 tbsp sweet chilli sauce

1 1/2 tbsp soy sauce

4 1/2 tbsp peanut butter

Instructions

Mix the dressing together with 4 tbsp of boiling water until smooth and leave to sit to the side. 

In a large bowl combine cabbage, carrot, onion, and chilli and mix. 

Thinly slice the mango and mix through the rest of the veg. 

Add the dressing and mix through the salad. 

Squeeze the other half of the lime, add the chopped peanuts and coriander leaf.
